The story of Honoré Farm and Mill
When you buy flour or cookies today, it will be delicious, but it’s also part of a larger story of redemption for our land and our health. For thousands of years, bread made from nutritious whole wheat sustained people because it was a nearly perfect package of vitamins, fiber, healthy fats, and hundreds of other phytochemicals. No wonder bread became known as the staff of life. It might be in a loaf or a flat bread, naan or tortilla, but it was the center of the table.
In just over a hundred years, industrialized wheat production has unwittingly stripped away these benefits. Commercial hybridized wheat is farmed for exceedingly high yield using a staggering amount of chemicals that aren’t good for our health or the health of the earth. Modern milling further processes the flour so that few of the original nutrients and flavor remain. Science is showing that the ultra-processed bread we are eating is leading to an increase in diet-related disease. Many people go gluten or bread free as the only solution to the side effects of eating this bread.
Honoré’s flour is a return to the original wheat - the first superfood. Our wheat is grown on fertile, small family farms, using organic practices, is stone-milled and from an heirloom variety. It is healthy, impressively delicious, and many people with gluten issues find they can once again enjoy wheat products made with our flour! (People with celiac or other gluten related conditions cannot eat any wheat including Honoré’s.)
Sourdough bread is a great way to use our flour. Because the bread is fermented, it is easier to digest and has a lower glycemic index. The fiber from the whole wheat is good for the gut and it is full of vitamins. We can help you get started! Did you know that you can make delicious sourdough bread in just two to three hours? And the active time is only about 45 minutes.
Not only are we restoring the vitality that was once present in our most basic food, organic regenerative farming rebuilds our soils and local food systems. We use zero pesticides and much less water. When you change your flour, you are part of the redemption of our land.
