Pound Cake


This is a no-fuss, simple, pound cake that is sure to be appreciated on any occasion. You most likely already have all the required ingredients you need on hand – how convenient! I love to add matcha, which is a delicate flavor, but pairs well with the other light flavors in this cake.

INGREDIENTS


4 large eggs

200 grams granulated sugar

14 tablespoons unsalted European butter, melted and cooled*

1 1⁄2 teaspoons vanilla extract

1⁄2 teaspoon almond extract

Zest of one lemon (or orange)

190 grams Sonora flour

1 tablespoon matcha powder (optional)

1 teaspoon salt

*When recipes call for melted butter and eggs, it's best to let the melted butter cool slightly before combining it with the other ingredients, as hot melted butter will partially cook the eggs.

METHOD

1. Preheat the oven to 350 degrees F. Butter and flour a 9 x 5-inch loaf pan.

2. Separate the egg yolks from the whites. Whisk the egg yolks in a large mixing bowl to break them up. Add the sugar and whisk until the mixture is thick and pale.

3. Add the melted butter, vanilla and almond extracts, and lemon zest and whisk until smooth.

4. Add your flour and matcha (if using) and fold in using a rubber spatula.

5. In a stand mixer, beat the egg whites until they form soft peaks. Add the salt and continue beating until stiff peaks form.

6. Fold egg whites into the batter.

7. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted in the center of the cake comes out clean.
