Irish Soda Bread


Irish soda bread is a quick, no-knead bread, that allows you to put a delicious freshly baked loaf on the table in no time. Serve plain or slathered with butter and topped with orange marmalade.

INGREDIENTS


280 grams Sonora flour

1 tsp. salt

1 tsp. baking soda

1 tsp. granulated sugar

1 tbls. unsalted butter, cold and cubed

140 grams sourdough starter (discard)

1 C. buttermilk

METHOD

1. Preheat oven to 450°F

2. Combine the flour, salt, baking soda and sugar in a large bowl using a fork.

3. Cut the butter into the flour using a fork or your fingers.

4. Add the sourdough discard and buttermilk and mix until well combined.

5. Mound the dough onto a baking sheet covered with parchment paper.

6. Flatten the mound slightly to 1 1/2”-2” thick.

7. Using a sharp knife, cut a large, deep “X” into the top of the dough. 8. Bake at 450°F for 15 minutes, then lower heat to 400°F and cook for an additional 30 minutes.

8. Cool on a wire rack. Soda bread is best eaten warm but keeps for a few days and is great toasted.
