Hungarian Coffee Cake
YIELDS 1 cake
TIME 1.5 hours
INGREDIENTS
CAKE
a pinch of salt
1 c. butter
1 1/4 c. sugar (290 g)
2 eggs
1 teaspoon vanilla
1 c. sour cream (255 g)
2 c. Sonora or Hourani* whole wheat flour (300 g)
1 teaspoon baking powder
1/2 teaspoon baking soda
TOPPING
8 tablespoons sugar
2 teaspoon cinnamon
*if using Hourani, add an extra egg
This recipe comes from our dear friend, Sally, and her Mother, Jean. Jean had the delightful nick-name of Cookie. This is our absolute favorite recipe for coffee cake, and we think that you will love it, too!
METHOD
Preheat oven to 350
Cream butter and sugar until just combined
Add slightly beaten eggs, vanilla, sour cream, and dry ingredients
Spread half of the batter in a buttered 9-inch tube pan and sprinkle with half of topping
Repeat with the rest of the batter and the remaining topping
Bake for 45 minutes
Let stand one hour and lift out onto a plate to cool
