Banana Bread

yields 2 loaves

ingredients

  • 2 cups sugar
  • 1 cup butter
  • 6 ripe mushed bananas
  • 4 eggs well beaten
  • 2 1/2 cups red fife whole wheat flour
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 tsp baking soda

method

  1. Preheat oven to 350
  2. Generously butter 2 loaf pans
  3. Cream butter and sugar until light and fluffy
  4. Add eggs and vanilla and mix well
  5. Add bananas until fully mixed but still lumpy
  6. In a separate bowl, fully combine all dry ingredients
  7. Add dry ingredients to wet until just incorporated, don't over mix
  8. Bake 45-50 minutes, until a toothpick comes out clean
