sourdough pancakes

INGREDIENTS
OVERNIGHT BASE

  • 1 c. sourdough starter (see our recipe)

  • 1 c. buttermilk

  • 1 c. honoré sonora or red fife flour

  • 1 tablespoon brown sugar

BATTER

  • 1 egg

  • 1/4 c. melted butter

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

METHOD

  1. Mix sourdough starter with buttermilk, flour, sugar. Cover the bowl and allow it to rest overnight at room temperature.

  2. In the morning, whisk the egg, melted butter, and vanilla together in a small bowl. Combine with the overnight base.

  3. Add the salt and baking soda to the batter and mix to combine.

  4. Pour some of the batter onto a preheated greased waffle iron and cook until the waffle is brown and crisp. Or use a small ladle to create pancakes on a preheated oiled pan or griddle. Serve immediately.
