banana bread

(with optional Sourdough addition)

This is one of our favorite recipes to make when spending time family, friends, or anyone special. We recently experimented by adding sourdough starter which gives the bread an almost impossibly perfect texture and rich flavor. If using sourdough, follow this same recipe but just make sure to pay attention to the additions at the end of the ingredients list.

INGREDIENTS

  • 2 cups sugar

  • 1 cup butter

  • 6 ripe mushed bananas

  • 4 eggs well beaten

  • 2 1/2 cups red fife whole wheat flour

  • 2 tsp vanilla

  • 1 tsp salt

  • 2 tsp baking soda

if making with sourdough starter, use all the above ingredients and:

METHOD

  1. Preheat oven to 350

  2. Generously butter 2 loaf pans

  3. Cream butter and sugar until just blended

  4. Add eggs, vanilla, bananas, and sourdough starter, if using, and mix until just mixed and still lumpy

  5. In a separate bowl, fully combine all dry ingredients

  6. Add dry ingredients to wet until just incorporated, don't over mix

  7. Bake 50-60 minutes, until a toothpick comes out clean
