Yield 12 Muffins


  • 2 eggs

  • 1/2 cup milk

  • 1/4 cup cookie oil

  • 1.5 cup sonora whole wheat flour

  • 1/2 cup sugar

  • 3 tsp baking powder

  • 1/2 tsp salt

  • 1 cup well drained blueberries


Whisk eggs, milk and oil with a fork. Stir in a separate bowl flour, sugar, baking powder, and salt. Mix wet and dry ingredients together, just until flour is moistened (batter should be lumpy.) Fold in blueberries Scoop batter into muffin cups. Bake at 400 for 20-25 minutes.
