Fruit Scones

Ingredients

  • 2 cups sonora whole wheat flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • pinch of salt
  • 5 tablespoons of cold butter (keep in fridge until ready to use), cut into 1/4 inch cubes
  • 1 cup of cream or half and half
  • seasonal fruit, e.g. blueberries, dried cherries or currents to taste
  • Demerara sugar for dusting (if desired)

Method

Preheat oven to 425. Pulse flour, sugar, baking powder, and salt in a food processor. Add cold, cubed butter. Pulse in food processor 12 times. Put mixture in a bowl and add cream or half and half. Mix together with a fork or even better, with your hands. Add fruit. Form a ball of dough and knead for 1 minute to mix everything together. Form into a 9” disc and cut into triangles. Sprinkle with Demerara sugar if desired. Place on a cookie sheet lined with parchment paper and bake for 12 minutes.
