Sonora is believed to be one of the oldest wheats grown in North America dating back to 1,500. A soft white wheat that is soooo delicious, light and fluffy it tastes like nothing else. Ours is grown in Northern California on organic small scale farms without irrigation. It’s stone ground fresh for each order for peak flavor and nutrition. 100% whole wheat. 
Sonora is as versatile as it is delicious making fluffy light pancakes, waffles, scones, biscuits, pie or quiche crust, cookies, cakes, tortillas, pasta and pizza dough.

Red Fife is a hard red wheat and is originally from Central or Eastern Europe, through Scotland, and cultivated in Ontario Canada - ours is grown in Northern California on small scale organic farms without irrigation. It’s stone ground fresh for each order for peak flavor and nutrition. 100% whole wheat. It has an unbelievable nutty, earthy flavor. Red Fife is the champion flour for breads, dinner rolls, quick breads, crackers and pasta. A wonderful gift for bread bakers.

Khorasan is a rare, ancient grain with a rich buttery flavor. The name refers to the historical region in modern-day Iran. The high level of carotenoids, which are a family of powerful antioxidants, are likely responsible for the deep golden color of the grain. Densely nutritious and easy to digest, Khorasan is ideal for people with sensitivity to wheat (not celiac however). Ours is grown in Northern California on organic small scale farms without irrigation. It’s stone-milled fresh for each order for peak flavor and nutrition. 
Khorasan is versatile.  Its baking characteristics make it ideal as a bread flour but it can be substituted in any recipe that calls for whole wheat flour - pasta, dinner rolls, pie crusts, scones, cookies.
