bread is broken
Once again the New York Times raises the issue of what industrialized agriculture has done to bread in the recent article, 'Bread is Broken.' They are right but what the article doesn't say is how many people are addressing this fact. There is an uprising taking place, small family farmers all over the country are growing heirloom organic wheat like we farmed last year at The Bishop's Ranch. Small bakeries, like Pondsford's Place here in the San Francisco Bay Area, are dedicated to baking with only 100% whole grains.
The article pronounces, "Industrial production destroyed both the taste and the nutritional value of wheat." Many of us are changing that and redeeming wheat. Look what happened to coffee: from Folgers to Blue Bottle. And wine: from Gallo red, white or rose to dozens of varietals and thousands of brands. Bread is coming back!
